Chocolate Coconut LaraBar

Yum, more vegan enchiladas (from Veganomicon). Again, I altered the recipe, using butternut squash and parsnips instead of potatoes. Also, instead of frying the tortillas and rolling them, I just make them lasagna style – it is much less work and tastes just as good! And, it’s been awhile since I had a LaraBar, looking forward to this chocolaty-coconutty goodness.

Mmmmmmmmmm…. coconut! I went to get shredded coconut, but all I could find was this bag of coconut flakes. Initially I was disappointed, but now I love them better than shredded coconut. These nice flakes are very coco-nutty- the give a nice satisfying crunch plus a nice juicy coconut flavor (they don’t dry out as much as shredded coconut). I love them on my cereal and so I thought I’d try them with some fruit for lunch. So, if you love coconut, try the flakes!

A few years ago I came across the blog of Kerri and Christopher called the The One Dollar Diet Project. It was fun to follow these two as they tried to eat on only a dollar a day each. I just read their book about the experience, and have since been inspired to make a better effort at buying in bulk. I generally make my meals fresh, from scratch, but I get lazy with beans. They really are much better cooked from dry, and it isn’t that hard as long as you remember to soak them overnight. So, here’s some soup from my big batch of Navy Beans (mmmmmm). I love’em cooked until they are melty. Next week: what should I do with Aduki beans???

I’m not getting tired of cabbage, but it seems repetitive on the blog. But, on the other hand, when you buy and cook in bulk for the week, you’re going to see repetition! I try to vary it a little every day, as you can see. And soon enough that big head of cabbage and package of black bean burgers will be gone.

I just got Brendan Brazier’s Thrive Diet book. He’s a triathlete who has designed a diet for performance and stress reduction. So, I can’t wait to experiment with the recipes, you’ll likely see the evidence next week via the bento box! Have a good weekend!

I’m really diggin’ the raw cabbage this week. And my Annie’s Papaya Poppy Seed dressing is a perfect topping. (Try it! I also love the Raspberry Vinnagrette). What else is good on cabbage?
