Mushroom-barley Harvest Soup; Tarragon Roasted Potatoes; Apple Slices with Almond Butter; Steamed Broccoli

This was truly a quick food bento. Slice an apple, throw in the leftover potatoes, steam the broccoli, and pour the soup. Voila! Quick and easy. Tasty, too! Roasted potatoes don’t reheat that well, but they still had plenty of flavor. I ate the broccoli cold (I like broccoli so much I’ll eat it prepared just about any way…). If you’re in a hurry, this is an easy template! Have a good lunch!
